Mango Margaritas
This is the last recipe in our Mexican fiesta series, and we saved it for today because, well, it’s a Friday. If ever there was a better time for Mango Margaritas than a Friday, this Friday to be exact, then I don’t know what it is. What’s so special about today? IT’S A FRIDAY!! And, if you make Mango Margaritas, it will magically become Mango Margarita Friday!!! Oooh yeah. That’s what I’m talking about. Whether you’re kicking off the weekend, or quelling the pain of another horrific work week, these frozen babies do the trick just fine.
Mango Margaritas
Makes just 1 cocktail, so unless you’re drowning your sorrows alone multiply by the number of guests.
- 1 cup frozen mango chunks
- 1 oz gold tequila
- 1/2 oz Triple Sec
- 1 oz simple syrup (or 1 tsp sugar and 1 oz water)
- 2 oz orange juice
- 1/4 lime
Rim the edge of a margarita glass with kosher salt.
In a blender, combine all of the ingredients except for the lime.
Blend until it is combined and there are no big icy chunks to choke on.
Squeeze in the juice of 1/4 lime, and give it another pulse to incorporate this in.
Pour into your rimmed margarita glass and garnish with a slice of lime.
I’ll be sipping this tonight to my current favourite Friday night song, Paper Planes by M.I.A. – but you owe it to yourself to never, ever watch the video.
