Alison - I&#039;m not a hitter!  An occasional swat, perhaps.  I know what you mean because blue cheese is certainly not for everyone.  Kristie made a great suggestion with manchego!  You want a strong, flavorful cheese but not something which is too gooey-melty.  Although this would change the flavor profile of the dish (note:  I cringe every time that I read smug Foodie-isms like &#039;flavor profile&#039;, but it&#039;s the best descriptor I have right now) you could also try a sharp and well aged grated white cheddar.</description>
